Our Story: From a Simple Idea to a Workplace Dining Revolution

Sometimes the best ideas come from looking at something familiar and realizing it could be better.

In late 2024, our founding team started exploring opportunities in the vending and micromarket space. What stood out right away was an industry built around convenience, but lacking in quality.

Micromarkets were already in office buildings across Texas. They offered variety and accessibility, but the food itself had not evolved. Most options were still packaged, predictable, and uninspired.

That gap became the opportunity.

With experience across hospitality, operations, and business strategy, and with Southerleigh earning Bib Gourmand recognition, the team saw a clear path forward. The goal was not to replicate what already existed, but to raise the standard. Workplace dining should feel intentional, not like an afterthought.

Three Co-Founders, One Vision

Raptor Vending was built by three co-founders, Ryan Kelly, Tracie Mendoza, and Cristian Kelly. Each brings a different strength, but all share the same belief that workplace dining can be better.

Together, they are building a premium micromarket experience that focuses on quality, consistency, and thoughtful selection. At its core, Raptor Vending is about changing expectations. Food at work should be something people enjoy, not something they settle for.

The Partnership That Changed Everything

Ryan’s conversation with longtime friend Jerome Serot, Managing Partner at Southerleigh Hospitality Group, transformed a vending concept into a culinary revolution. Jerome immediately understood the vision: Southerleigh’s excellence could be the differentiator that transforms an entire category.

The timing was perfect. Southerleigh was already expanding beyond restaurants, with plans to bring their culinary excellence to San Antonio International Airport in 2026. Together, we realized we could own the premium segment of workplace dining across Texas—a segment we would create ourselves.

Building Something Revolutionary

Throughout 2025, our founding team pitched their vision to dozens of commercial real estate companies and property managers. We weren’t just offering another vending solution.
